I would like to try caviar but it is not yet in my experiences known which are kosher

Tried some caviar. Thought if it was fish eggs, most likely it was kosher. Got some monk fish caviar at the grocery store. $9.  It was tasty and salty and made me think that it would be a good product to enjoy.

Learned tonight it is not kosher. A bottom feeder variety.

But then Looking for new kosher caviar, I learned the popular sturgeon is not considered kosher as the scale type is not considered orthodox kosher by orthodox authorities.

Bowfin looks ok I think. Peluga not so sure. Paddlefish not either I think.

So I did write to Dinonline.org to the rabbis to see if they will give me some advice.

Lets see if this might be happy outcomes.

Think fish fish fish.  Then eat that which is kosher.

That's about it.  Hope this story has good futures!

Shalom!
